Soba Noodles with Chicken and Snap Peas
Ingredients
- 1 pack Soba - Buckwheat noodles
- 1/2 pack - 4 oz snap peas cut into bite size pieces
- 2 store bought plain Rotisserie chicken breasts skin off and chopped
- 2 scallions - green onions chopped
- 1-2 tbsp peanuts chopped for topping
- 1/3 cup napa cabbage sliced fine
Sauce
- 3 tbsp low sodium soy sauce
- 1 tbsp healthy creamy peanut butter
- 3 tbsp extra virgin olive oil
- 1 lime the juice
- 1 teaspoon toasted sesame oil
- Black pepper
- 1 pinch salt

Instructions
- Cook soba noodles in water to package instructions and drain and rinse very well and set aside. Chop chicken, onions, cabbage and peanuts and set all ingredients aside.
- In a food processor add the sauce ingredients and pulse until smooth and set aside.
- Last, add the soba noodles and all other ingredients except the peanuts to a large sauté pan and pour the sauce over the top. Cook everything on medium heat for about 5 minutes until all the flavors have combined.
- Top with chopped peanuts and serve immediately! :) Cooks tip: Add a drizzle or of olive oil and a squeeze of lime over the top before eating if needed.
