Spinach and Pea Soup
super easy

Ingredients
- 4 oz fresh spinach leaves I had a 5oz container and used almost all of it so about 4 oz
- 1/2 bag frozen peas thawed
- 1/2 medium white onion chopped - can be a large chop because you are going to blend it anyway
- 2 cloves garlic smashed
- 1 TBSP flat leaf parsely
- 3 sprigs fresh dill
- 3 cups low sodium chicken both use less of more to your desired thickness - and use vegetable soup to make this vegetarian
- 2 TBSP extra virgin olive oil
- 1/2 lemon the juice
- salt and pepper
Topping
- 1/2 TBSp crumbled goat cheese I highly recommend this but optional

Instructions
- In a medium pot add the olive oil, chopped onion and a pinch of salt and cook for about 6 minutes. Then add in the garlic, spinach, peas, fresh herbs and some more salt and pepper and cook about 3 minutes until the spinach starts to wilt.
- Next, add in the chicken stock and lemon juice and stir everything around to combine. Then let this simmer and cook for about 10 minutes until all the flavors have combined and the stock reduces a little bit.
- The carefully add the soup to a blender and make sure to hold a kitchen towel over the top and pulse until smooth and enjoy!
- This soup is great for a detox soup because it is so rich in nutrients and is so delicious and healthy.
