Stuffed Mini Gold Potatoes

Ingredients
- 8-10 small golden potatoes
- 2 tbsp extra virgin olive oil
- 1/4 cup shredded cheddar blend
- 2-3 tbsp Parmesan cheese
- 2 green onions - scallions chopped
- 2 tbsp light butter room temperature
- 3 tbsp light sour cream
- 1/2 teaspoon paprika
- salt and pepper

Instructions
- In a pot on the stovetop add the potatoes and cover them with water and a pinch of salt and boil them until until they are fork tender about 12-14 minutes. Once they are done, drain the potatoes and rinse them with cold water and then cut them in half. Then carefully with a small spoon scoop out middle inside of each potato half, leaving a little around the sides.
- Next, in a large mixing bowl add the potato insides, butter, sour cream, green onion, both cheeses, and some salt and pepper and mix well to combine.
- Then fill each small potato half with the potato mixture and place them on a baking sheet that has the olive oil brushed all over it and top each one with a sprinkle of paprika and a touch more shredded cheese.
- Make sure your oven is pre-heated to 350 degrees and bake the potatoes for 20 minutes. You can also make these ahead of time and then bake them off right before serving. :)
- Last, transfer these delicious potatoes to a serving tray and enjoy! These are a hit for parties, to watch football or even for a week night meal because kids love them!
