Stuffed Shells with Turkey, Zucchini and Artichokes
Ingredients
- 1 box jumbo pasta shells
- 1 pound ground turkey
- 1 medium onion - chopped
- 3 garlic cloves chopped
- 1 zucchini peeled and chopped small
- 1 jar marinated artichokes - drain and chopped
- 1/4 cup flat leaf parsely chopped
- 2 tablespoons extra virgin oilve oil
- 1 tablespoon italian seasoing
- 1 ( 15 oz ) part skim riccota cheese
- 1/2 grated parmesean cheese
- 1 large jar good healthy marinara sauce
- 3/4 mozzerella cheese - shredded
- 1 egg
- salt and pepper

Instructions
- Cook pasta shells in a large pot of boilng salted water according to pakage instructions - drain and then set aside
- Meanwhile in a large pan on medium heat add in the oilve oil and onion with some salt and cook until tender about 6 minutes and then add in the garlic and cook another 2 minutes
- Next add in the ground turkey, italian seasoing, and some salt and pepper and cook until browned and no longrer pink - then add in the zucchini, artichokes and flat leaf parsely and cook another 3-5 minutes until everything is combined and turn off the heat - once mixture is cooled transfer to a large mixing bowl
- In a another mixing bowl add in the egg, ricotta, parmesean and some salt and pepper and mix to combine
- Then add the cheese mixtute to the turkey mixture and mix well to combine
- Then in a large baking dish coat the bottom with a little of the marinara sauce and then carefully stuff each shell with the turkey mixture and place them all in the baking dish evenally - then top all of the shells with the rest of the marinara sauce and top that with the mozzerella cheese
- Bake at 400 degrees for about 45-50 minutes depending on your oven and until the top is golden brown and serve!
