  1. Cook pasta shells in a large pot of boilng salted water according to pakage instructions - drain and then set aside
  2. Meanwhile in a large pan on medium heat add in the oilve oil and onion with some salt and cook until tender about 6 minutes and then add in the garlic and cook another 2 minutes
  3. Next add in the ground turkey, italian seasoing, and some salt and pepper and cook until browned and no longrer pink - then add in the zucchini, artichokes and flat leaf parsely and cook another 3-5 minutes until everything is combined and turn off the heat - once mixture is cooled transfer to a large mixing bowl
  4. In a another mixing bowl add in the egg, ricotta, parmesean and some salt and pepper and mix to combine
  5. Then add the cheese mixtute to the turkey mixture and mix well to combine
  6. Then in a large baking dish coat the bottom with a little of the marinara sauce and then carefully stuff each shell with the turkey mixture and place them all in the baking dish evenally - then top all of the shells with the rest of the marinara sauce and top that with the mozzerella cheese
  7. Bake at 400 degrees for about 45-50 minutes depending on your oven and until the top is golden brown and serve!
