Sun-dried Tomato Pesto Turkey Burgers

Ingredients
- 1 8.5 oz jar sun-dried tomatoes packed in oil
- 1 cup fresh basil leaves
- 2 garlic cloves
- 1/3 cup fresh grated Parmesan Reggiano
- 1/4 cup toasted pine nuts
- 1 pound pound ground turkey
- 1 ball - fresh mozzarella
- salt and pepper
- 4 Ciabatta rolls
- tomato slices optional

Instructions
- In a food processor add in the sun-dried tomatoes, basil, garlic, toasted pine nuts and some salt and pepper and pulse until combined and the texture of pesto - last add in the cheese and pulse again - set aside
- Add 1/2 cup of the pesto to a mixing bowl and then add in the ground turkey and mix to combine. Then form into 4 patties - add the patties to a hot grill pan and cook for 5 minutes per side until done
- The last 2 minutes add the fresh mozzarella and cover them to melt the cheese - add to a ciabatta roll and serve! I warm the bread in the toaster oven and add a bit of light mayo and sometimes a tomato slice. :)
- I came up with these today and they are the BEST turkey burgers ever!!!
- Reserve the left over pesto in the refrigerator for any other recipe you come up with - would be great on pasta!
