Sweet Potato Noodles with Turkey Sausage

Ingredients
- 1 large sweet potato- make noodle strands on a Spiralizer - I got mine on Amazon.com
- 2 garlic cloves chopped
- 1/2 cup chicken stock
- 1-2 mild turkey sausage squeeze out of the casing and break up in the pan
- 1 tbsp extra virgin olive oil
- 1/2 cup baby arugula
- Parmesan cheese for topping at the end
- salt and pepper

Instructions
- Spiralize the sweet potato and set aside. Meanwhile in a large sauce pan and in the oil and sausage and break up the sausage with a spoon as it browns. Next add in the garlic and cook it for 2 minutes and then add in the chicken stock and stir to combine.
- Next add in the sweet potato noodles and some salt and pepper and toss them around in the sauce and cook for about 8 minutes until tender. Last, add in the arugula and cook another 3 minutes until wilted and serve! I top this with a little parmesan cheese and it is light and delicious!
