Teriyaki Shrimp with Broccoli Pasta
Ingredients
Grilled Teriyaki Shrimp
- 1 tbsp Teriyaki sauce
- 1 tbsp extra virgin olive oil
- 1 teaspoon honey dijon mustard can find this next to the original dijon mustard
- 1 pound raw shrimp peeled and deveined
Broccoli Pasta
- 3/4 box whole grain macaroni pasta
- 1 head broccoli stems off cut into small florets
- 1 large tomato chopped
- 1 cup low sodium chicken broth
- 1/4 cup extra virgin olive oil more if needed
- 1/2 -3/4 cup fresh grated parmesan cheese as needed
- 1/4 cup shallot chopped
- 2 cloves garlic chopped
- 2 tbsp flat leaf parsley chopped
- 2 tbsp lemon thyme or regular chopped
- 1/2 lemon juice
- salt and pepper

- For the Shrimp: Add shrimp to the marinade and add a pinch of salt and pepper and marinate in the refrigerator for at least 30 minutes. Then put them on metal skewers and grill for about 3 minutes per side and set aside and keep warm.
- For the Pasta: Boil the pasta to package instructions and set aside. In a large sauté pan add 1 tbsp of the oil and the shallots and cook for about 4 minutes and then add in the garlic and cook another 2 minutes.
- Next, add in the cooked pasta, broccoli, chicken broth, herbs and some salt and pepper and cook for about 5 minutes and then add in the chopped tomatoes, cheese, lemon juice and the rest of the olive oil and toss and cook for another few minutes and serve with the shrimp on top!
- This is a light and easy dish perfect for spring and summer! :)
