Tomato Cabbage Soup
super easy
Ingredients
- 1 head cabbage chopped
- 1 large shallot - chopped
- 2 cloves garlic chopped
- 1 carrot peeled and chopped
- 1 stalk celery chopped
- 1 tbsp dried thyme
- 1 tbsp dried oregano
- 1 28oz can whole peeled or diced tomatoes San Marzano - I like the whole peeled and I put them in a bowl and crush them with my hands
- 2 boxes low sodium chicken broth
- 2-3 tbsp extra virgin olive oii
- salt and pepper

Instructions
- In a large soup pot add the oil, shallots, carrot, celery and a pinch of salt and cook for about 8 minutes and then add in the garlic and dried herbs cook another 3 minutes.
- Next, add in the tomatoes, cabbage, more salt and pepper and chicken broth and cook about 30 minutes or until the cabbage is tender and serve!
- This soup is so healthy and delicious and super easy to make!
