Tomato, Mozzarella, Cucumber and Roasted Beet Kabobs
super easy
Ingredients
- 1 pint cherry tomatoes ( or more depending on how many guests you have )
- 1 tub buffalo mozzarella balls get the small bite size ones
- 2 Beets scrubbed clean
- 1 English cucmber
For dipping - can use either
- 1/2 cup basil dressing ( I like Basil and Fig - found at Fresh Market )
- 1/2 cup your favorite vinaigrette
- 1 pack toothpicks or cake pop sticks

- For the beets: Wash and scrub clean the beet and cut off the top and cover with 1-2 tablespoon olive oil and then wrap it in aluminum foil and put it in the oven at 375 degrees - cook about 45 minutes - once it comes off the heat and cool -then scrape the skin off and cut it into slices and then set aside ( I make these once a week and leave them in the refrigerator for making soups, salads etc
- This is so easy - just assemble each kabob and put them on a tray and serve the dressing on the side and thats it!
