Turkey and Kale Meatballs Stuffed with Mozzarella Cheese
Ingredients
- 1 pound ground turkey
- 1/2 onion grated on a cheese grater
- 1 clove garlic chopped
- 1 tbsp ketchup
- 2 tbsp fresh grated parmesan cheese
- 1 cup Kale chopped
- 1 tbsp low fat milk
- 1 egg
- 2 tbsp italian style bread crumbs
- a pinch nutmeg
- 1 block Mozzarella - cut into small cubes or grated both will work
- salt and pepper
Tomato Sauce
- 1 jar healthy marinara sauce
- 2 cups low sodium chicken both
- 2 tbsp extra virgin olive oil for browning the meatballs

Instructions
- In a large mixing bowl add all the meatball ingredients EXCEPT the ground turkey and the mozzarella and mix well to combine. Next, add in the ground turkey last and mix - then put some of the mixture your hand and add the mozzarella to the middle and then add more meatball mixture and cover the cheese and roll into a ball.
- In a large sauté pan add the extra virgin olive oil and brown the meatballs for about 6 minutes. In a large pot add the marinara sauce and chicken broth and bring to a boil and then add in the meatballs and cook them in the sauce for about 45 minutes and serve!
- These are so delicious but light and I like to serve them with whole grain pasta. :)
