Turkey Shepard’s Pie with Cauliflower Mash

Ingredients
Turkey and Fixings
- 1 pound ground turkey
- 1/2 medium white onion chopped
- 2 garlic cloves chopped
- 1/2 cup tomato sauce
- 1 tbsp worcestershire sauce
- 1/4 tsp ground mustard
- 1/3 cup chicken stock
- 1 tbsp flour
- 1 cup frozen corn thawed
Cauliflower Mash
- 1 head orange cauliflower chopped
- 1 tbsp light sour cream
- 1 tbsp Parmesan cheese
- 2 tbsp light butter
- 2 tbsp light cream cheese
- 1 pinch garlic powder
- salt and pepper
- cooking spray for ramekins
- 1-2 tbsp extra virgin olive oil (for turkey mixture)

Instructions
- Bring a pot of water with a pinch of salt to a boil, and add in the cauliflower and cook about 8-10 minutes until the cauliflower is fork tender- drain and add it in a blender or food processor.
- Next add in the butter, sour cream, cream cheese, garlic powder, parmesan and salt and pepper and blend until smooth and set aside.
- Next in a pan on medium heat add in extra virgin olive oil, onion and a pinch of salt and cook about 6 minutes until tender and then add in the garlic and cook another 2 minutes.
- Then add in the ground turkey and some more salt and pepper and cook until no longre pink ( about 6 minutes) and then add in the corn, chicken stock, tomato sauce, ground mustard, flour and Worcestershire sauce and simmer for about 15 minutes until stock has reduced and mixture is thick.
- Next in individual ramekins ( or one large baking dish ) sprayed with cooking spray add in the meat mixture and spread evenly in the dish. Next add the cauliflower mash on top and spread evenly over the meat mixture. Top with some parmesan cheese and bake at 400 degrees for about 25 minutes or until top is golden.
- I always turn the oven to broil the last few minutes if the top is not getting a little brown :) I LOVE serving these as individual portions this is my daughters favorite recipe!!!
