Turkey, Spinach, and Artichoke Lasagna

Ingredients
- 1 pound ground turkey
- 1/2 white onion - chopped
- 2-3 cloves garlic chopped
- 1 box frozen artichokes thawed and chopped
- 1 box frozen spinach thawed and draind in a paper towel to remove water
- 1 box gluten free brown rice lasagna noodles
- 1 jar good healthy marinara sauce I used DeLallo - from Kroger and its delicious
- 2 tbsp extra virgin olive oil
- 1 teaspoon dried tyhme
- 1 bag mozzarella cheese
- 1/3 cup grated parmesan cheese
- salt and pepper

Instructions
- Cook lasagna noodles to package instructions ( mine was boil for 4 minutes and finish cooking in the oven) then rinse and set aside ( I lay my noodles out on a baking sheet )
- In a large sauce pan add extra virgin olive oil to the pan on medium heat and the chopped onions with a pinch of salt and cook for about 6 minutes and then add in the garlic and cook for another 2 minutes.
- Next add in the ground turkey, thyme, and some more salt and pepper and cook until the turkey is no longer pink. Next add in the chopped spinach and artichokes and a pinch more salt and pepper and mix to combine.
- Next add in about 3/4 of the jar of marinara sauce and cook for about 5 minutes until all the flavors have combined and then turn the heat off and set aside.
- Last add a little bit of the reserved marinara sauce to the bottom of a baking dish and then start layering. The noodles first - then half of the turkey mixture, a sprinkle of parmesan cheese and some of the mozzarella cheese - then again the noodles, turkey mixture, parmesan & mozzarella and last a layer of the noodles. Then top the last layer of noodles with the remaining jar of marinara sauce and some more mozzarella and parmesan.
- Bake at 350 degrees for 30-35 minutes until the top is brown and bubbly and enjoy! I made this last night for dinner and my daughter and I loved it!!!
