In a dutch oven or large pot add in the oil and the onion, carrot, celery and a pinch of salt and cook for about 8 minutes and then add in the garlic and cook another 2 minutes.
Next add in the ground turkey and some salt and pepper and cook until browned about 5 minutes and then add in the wine, herbs, pinch of red pepper flakes and cook about 4 minutes to get brown bits off the bottom of the pot
Next add in the tomatoes, beans and chicken stock and let simmer for about 30 minutes and last add in the orzo and let cook until the orzo is tender - right before serving add in the spinach ( as much as you like ) until it is wilted - top with some parmesan cheese and enjoy!
I made this recipe up while watching football on a cold day and it is amazing! It is even more delicious the next day! :)
