Turkey Taco Salad
super easy
Ingredients
- 1 pound ground turkey
- 1 yellow bell pepper chopped
- 1-2 tbsp extra virgin olive oil
Taco Seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne papper
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon chipotle pepper can find it near seasoning in the grocery store
- salt and pepper
Toppings
- 1 bag organic blue corn chips
- 1 bag shredded ice burg lettuce
- 2 Plum tomatoes chopped
- 1-2 ripe avocados chopped
- 1/3 cup Cilantro chopped
- 1 can refried beans warmed on stove top
- 1 jar salsa
- 1 bag shredded Mexican cheese

Instructions
- In a small mixing bowl and all the seasonings and set aside. In a large sauté pan add the olive oil and pepper and cook about 3 minutes and then add in the ground turkey and seasonings and cook about 10 minutes until no longer pink and cooked through.
- Then just build your taco: I add the chips and lettuce first - then the turkey and beans and last whatever toppings you like.
- This is a great week night dinner because it is so easy and family friendly! :)
