Turkey Tetrazzini
Ingredients
- 4 pre-cooked turkey breasts - chop it into cubes ( can find these in grocery store near lunch meats)
- 4 cups whole grain spaghetti ( break it twice before cooking it to make small strands for this dish )
- 1 small white onion - chopped
- 4 garlic cloves chopped
- 2 cups 2% milk
- 1 cup chicken stock
- 1 tablespoon fresh thyme
- 1 package button mushrooms - sliced
- 3/4 cup white wine
- 3/4 cup frozen peas - thawed
- 3/4 cup Italian blend shredded cheese ( I used 5 blend Kraft - part-skim mozzarella, provolone, romano, asiago and parmesan)
- 1/4 cup flat leaf parsley chopped
- 2 pinches nutmeg
- 2 tablespoons flour
- 4 tablespoons light butter
- 1 tablespoon olive oil
- 1/2 cup Panko breadcrumbs ( Parmesan & herb flavored )
- salt and pepper

Instructions
- Bring a pot of water to a boil and break pasta into the pot and cook according to package about 10 minutes drain and set aside
- In a large mixing bowl add chopped turkey and peas and set aside
- In a pan on medium heat add the olive oil ,1 tablespoon of butter and the onion and some salt and cook for about 6 minutes until tender and then add in the garlic and cook another 2 minutes
- Next add in the mushrooms, thyme and some salt and pepper and cook for about 2 minutes and then add in the wine and flat leaf parsley and simmer until wine reduces about 10 minutes - then pour mushroom mixture into large mixing bowl with the turkey and mix to combine and set aside
- Then in the same pan on low heat- add in 2 more tablespoons of butter and the 2 tablespoons of flour and whisk for 2 minutes - then whisk in the milk, chicken stock , nutmeg and some salt and pepper and increase heat to high - bring to a boil and simmer uncovered, whisking often about 10 minutes until sauce thickens
- Next pour the sauce over the turkey/ mushroom mixture in large mixing bowl and add in the cheese and the pasta and mix to combine
- Last transfer the mixture to a baking dish that has been sprayed with cooking spray and spread it evenly into the dish - top with the bread crumbs and then take the last tablespoon of butter and break it apart with your fingers over the bread crumbs - this will help brown the top while cooking
- Bake uncovered at 400 degrees for about 25 minutes or until top is golden brown ( if top doesn't get brown you can put oven on broil for the last 3 minutes )
