Vegetable Soup with Cabbage Recipe

Ingredients
- 2 cups cabbage chopped
- 1 large carrot peeped and chopped
- 1 stalk celery chopped
- 1 yellow onion chopped
- 3 cloves garlic chopped
- 1 zucchini chopped
- 1/2 cup fresh green beans cut into bit size pieces
- 1 teaspoon dired oregano
- 2 tbsp fresh thyme
- 3 cups low sodium chicken broth
- 2 cups vegetable broth
- 1 cup water
- 1 tbsp extra virgin olive oil
- 1/2 cup good marinara sauce
- 2 tbsp flat leaf parsley
- salt and pepper

Instructions
- In a large pot or dutch oven add the oil, onion, celery, carrots, oregano and a pinch of salt and cook for about 6 minutes and then add in the garlic and cook another 2 minutes.
- Then add in the 1/2 cup of marinara sauce, greens beans, zucchini, thyme and some salt and pepper and stir to combine. Next add in the parsley, chicken broth, vegetable broth and water and and bring to a simmer and cook for about 30 -35 minutes until all the flavors have combined and enjoy!
- This soup is good for you and delicious - you can also top it with a little parmesan cheese ! :)
