Watermelon, Feta and Walnut Salad

Ingredients
Salad
- 1/2 Watermelon cut into cubes
- 1 block feta cheese cut into cubes
- 2 tbsp chopped walnuts
- 1/4 cup fresh basil chopped
- 1-2 tbsp fresh mint chopped (if you like a strong mint flavor use 2 if not just 1)
Dressing
- 1 tbsp olive oil extra virgin
- 1 tbsp balsamic vinegar
- 1/4 tsp honey
- salt and pepper

Instructions
- Place cubed watermelon and feta on a serving dish and top with the chopped basil, mint and walnuts
- In a small mixing bowl add the olive oil, vinegar, honey and a pinch of salt and pepper and mix to combine - then spoon the dressing over the salad and enjoy!!
- I made this yesterday and could NOT stop eating it! This salad even gets better as it sits, I put what was left in the refrigerator and went back all day taking a bite. :)

Can we add cottage cheese instead of feta cheese
