  1. Slice the zucchini and pat them dry with a paper towel and then season one side with salt and pepper and place them seasoned side down in a hot pan with the olive oil. Cook for about 2-3 minutes until it has a brown crust - then season that up side with a bit more salt and pepper and flip and cook the other side the same amount of time.
  2. Next, add some marinara sauce to the bottom of a baking dish and place the zucchini slice on top in rows and then top each one with some parmesan cheese - then a bit more sauce on each one and then with a piece of mozzarella cheese.
  3. Last, spray the tops with a little bit of cooking spray and bake at 400 degrees for 5-7 minutes until cheese has melted and serve!
  4. I created this today and it's by far my favorite zucchini recipe!!! :)
