Zucchini Pasta with Avocado & Spinach Sauce
Ingredients
- 1 large zucchini peeled with a potato peeler to make "pasta"
- 1/2 avocado insides out and diced
- 1 cup fresh spinach -
- 1 garlic clove
- 2 tablespoons Parmesan cheese
- 2-3 tablespoons olive oil
- 1 tablespoon lemon juice ( optional )
- salt and pepper

- For the sauce : In a food processor add the avocado, spinach, garlic, lemon, 1 tablespoon of the parmesan cheese, olive oil and some salt and pepper to taste and pulse until smooth
- In a saute pan on medium heat add a little olive oil and cook the ribbons of zucchini for about 4 minutes until warmed through then add the avocado sauce mixture on top and heat until warm about 3 minutes
- Take off the heat and place in a bowl and top with the rest of the parmesan cheese and serve! ( I eat this for lunch all the time so healthy and delicious!)
