Vegan Bunny Rice Krispie Treats

I can’t believe is is almost Easter and we are still in such a crazy time right now. Family gatherings have gotten smaller and everyone is very carful about who they spend time with due to Covid. I wanted to make a sweet treat this year that was somewhat “healthy” since I do feel everyone is taking better care of their bodies. I have a lot of friends that have started being vegan and even my daughter Laila has been trying a lot of vegan restaurants. The grocery stores have all the vegan options now, so I thought I would make Rice Krispie treats because I hate to bake. LOL These were easy to make and delicious, they just take a little arm muscle and a few key ingredients.

Here is what you need:


10 oz box – Organic Brown Rice Crisps Cereal

2 10 oz bags- Dandies Vegan Vanilla Marshmallows

3/4 cup – Earth Balance Organic Whipped Vegan Butter

1/2 teaspoon – Simply Organic Vanilla Extract

PAM cooking spray

13 X 9 Baking dish

Parchment Paper

Bunny Cookie Cutter

The just simply follow the original recipe but just a little bit different then the original because they are vegan after all! :) So start off by melting the 3/4 cup of butter first and then add the larger vegan marshmallows and start to melt them down. Then as they start melting I take a sturdy spatula and I start cutting each large marshmallow in half so they melt easier.

The vegan marshmallows will melt but they will not completely melt like regular ones do and they will look more like a big melty blob. Once the marshmallows get to this point, turn off the heat and stir in the vanilla extract.

Then immediately start adding the box of rice cereal in and I start with half the box and then add in the other half of the box. This will take some muscle and will not be perfect but don’t worry it does not have to be at all. You just need to make sure you incorporate all the cereal together with the marshmallow mixture it is fine I promise! :)

The next step is important make sure to place the parchment paper on the bottom of the 13 X 9 baking dish and spray it with the PAM cooking spray. Then transfer the mixture into the baking dish and spread it out as evening as you can. Then let this Krispies cool for at least and hour until you are ready to cut them.

Then lift the Krispie treats out using the parchment paper and transfer them to a cutting board. Next, using your cookie cutter press down as hard as you can to cut through the treat and this will take some strength. HaHa

I also used a small knife to cut away any extras sticky parts that remained around the cookie cutter.

You will get 6 bunnies out of this pan if your cookie cutter is large like mine and the rest I just cut into small squares.

Then I like to decorate mine with faces for Easter, so I added pink sprinkle noses that I attached with a small white icing gel. I also used some black icing gel to make little round eyes but I definitely stooped there!
